Pumpkin Zuchinni Bread

I love making up recipes or modifying recipes to make them healthier. Here's my Pumpkin Zuchinni Bread recipe I made today:

Ingredients
  • 2 organic large brown eggs
  • 1/3 cup raw honey
  • 1/3 cup organic unsweetened applesauce
  • 1 tbsp organic vanilla extract
  • 1/2 cup organic butter
  • 1 15 oz. can organic pumpkin
  • 3 cups white whole wheat flour
  • 1/4 cup organic flaxseed meal
  • 1/2 tsp aluminum free baking powder
  • 1 tsp baking soda
  • 1/2 tsp himalayan salt
  • 1 tbsp pumpkin pie spice
  • 1 tsp cinnamon
  • 2 cups organic grated zuchinni
  • 1/2 cup nuts (I had pecans)
Steps
  1. Grease 2 bread pans (I use Pam organic olive oil spray)
  2. Preheat oven to 350 degrees
  3. Blend wet ingredients
  4. Add dry ingredients
  5. Stir in zuchinni and nuts
  6. Divide between two pans and bake at 350 degrees for 1 hour
