Lauren's 'Naner Pancakes with Strawberry Sauce

We made these yummy (and healthy!) pancakes this morning. Note: Double recipe for Adam & Mo. This is my friend Lauren's recipe:
 
'Naner Pancakes
Serves 2

Ingredients:

  • 2/3 cup brown rice flour (or whole wheat or all-purpose)
  • 1 tsp baking powder
  • 1 large pinch of salt
  • 2 dashes of cinnamon
  • 1 tsp pure vanilla extract
  • 1 melted* and mashed banana
  • 1/2 cup almond milk (or regular milk) plus more for thinning out batter
*If you have been reading this blog, you may have noticed that I like to use banana as a natural sweetener instead of sugar.  I find that by melting it in the microwave, for about 20-30 seconds, it makes it really easy to mash up and also kicks up the flavor!  Plus, it smells good!

Putting it together:

1. Mix together the dry ingredients: flour, baking powder, salt, and cinnamon.

2. In a separate bowl, combine wet ingredients: mashed banana, milk, and vanilla.
3. Add the dry ingredients into the wet ingredients; mix until just combined.  Add more milk, a tbsp at a time, if the batter is too thick.

4. Pour batter on a hot non-stick griddle heated to 375- 400 degrees.  Cook for 2-3 minutes per side, until golden brown.
5.  Plate pancakes, and top with sliced bananas and syrup or honey, or try my strawberry sauce (see below).




And you gotta have a fun plate to put them on!  :)

If you like light and airy pancakes, then go to IHOP.  These are really dense and moist because of the 'naners- very filling and wonderful!

Strawberry Sauce

1. Slice up fresh strawberries and place into a food processor or blender.  2. Add a small squeeze of lemon juice.
3. Puree until sauce is smooth.

 This sauce makes an excellent, versatile topping for pancakes, cake, ice cream, yogurt, etc.  Or eat it by the spoonful like I do!

  1. So, is using banana as a substitute for sugar like using applesauce for an oil or butter? I'm such a recipe follower that I never stray from what it calls for! I think Joel would really appreciate some healthier alternatives to my baked goods! How do you know how much banana to use?
