Raspberry Oatmeal Bars

Ingredients
  • 1/4 cup dark brown sugar
  • 1 cup organic butter (room temp)
  • 1 organic egg
  • 1 tsp organic vanilla
  • 1 cup white whole wheat flour
  • 1/2 tsp baking soda
  • 1/4 tsp himalayan salt
  • 1 3/4 cup whole grain old fashioned rolled oats
  • 10 oz. jar Polaner All Fruit with Fiber Raspberry Seedless Spreadable Fruit
  • 1/2 tsp organic whole ground flaxseed meal
  • 1/2 cup organic frozen raspberries
Steps
  1. Beat sugar and butter then add egg and vanilla, beat again
  2. Mix flour, baking soda, and salt. Add this mixture to wet mixture.
  3. Stir in 1 1/4 cup oats.
  4. Press 2/3 dough into buttered 9x9 pan.
  5. Spread jam on top.
  6. Sprinkle flaxseed meal on top.
  7. Add 1/2 cup rolled oats to remaining dough and crumble on top.
  8. Bake at 350 degrees for 25 minutes.
  9. Add 1/2 cup crumbled frozen raspberries to top and put in warm oven for a minute.
  10. Let cool, cut, and enjoy!
